Stations that include a pump that draws cooked food from a steam kettle. The pump draws product either from the top of the kettle or from a draw off valve on the kettle. The pump measures a pre-set volume of food and fills a flexible plastic casing or plastic tray. Some stations have an air compressor to pump the product; other stations have a foot pedal to pump the product manually. These stations may have a holder for the plastic casings and a clipper to seal the containers as well as other accessories. These pumps are used in a cook chill process, which involves the full cooking of a large volume of food followed by rapid chilling and storage at controlled temperatures.
