  • A 40 carbon dietary fatty acid that is an intermediate in carotenoid biosynthesis in plants and is derived from the desaturation of double bonds in phytoene with potential to absorb ultraviolet radiation (UV), and potential antioxidant, chemopreventive and anti-inflammatory activities.
