  • Units that separate grease, fats, and oils, as well as other solids, from wastewater and then let the water pass through to the plumbing system. Water from sinks and dishwashers enters through the inlet of the unit and is slowed with a flow restrictor, usually passing through a series of baffles, to help separate the grease from the water. The grease is less dense than water; therefore, it floats to the top and gets trapped in the grease interceptor, while water flows freely through the outlet and into the plumbing system. In addition, solid waste that is denser than water accumulates at the bottom of the unit. The grease interceptor is a standalone unit that is constructed of metal and/or plastic. Grease interceptors can be connected to one or more sink and/or dishwashers. Some units included a draw-off hose and line shut-off valve to remove accumulated grease without having to open up the entire grease interceptor.
